Peanut Butter Granola Clusters

Hello my friends and happy Wednesday! Time for blog post number two. If you love peanut butter and granola as much as I do, then you are in for a special treat. Today I will share my super simple homemade peanut butter granola cluster recipe. This tasty granola recipe only requires three ingredients and 10 minutes of preparation!

So, what inspired me to make peanut butter granola you ask? Nature Valley Peanut Butter 'N Dark Chocolate Granola Protein did!

This stuff is so, so delicious. I like to pair it with a bit of almond or cashew milk and some bananas, yum. I couldn't get enough of this granola. So I thought to myself, why not attempt a homemade version? A cheaper, less processed, less sugary alternative to munch on from time to time. And so I did.

Homemade Peanut Butter Granola Clusters

Perfect for: Breakfast, snack

Prep time: 10 minutes

Bake time: 30 minutes

Makes: A bit more than one 16oz mason jar can hold.

Ingedients:

2 cups uncooked oats (I use generic brand of quick cooking oats)

1/2 cup peanut butter (I use Smucker's Natural Creamy Peanut Butter. Any peanut butter will do.)

1/8 cup honey

Directions:

1. Preheat oven to 275 degrees Farenheit

2. Place uncooked oats in a large bowl

3. Combine peanut butter and honey in a separate bowl. Note: If you use natural peanut butter which has a soupy/liquid consistency there is no need to microwave it, it should mix well with the honey. If the peanut butter you use is thick place it in the microwave with honey to melt. Microwave at 20 seconds intervals until PB thins out to a liquid consistency.

4. Slowly add a portion of the peanut butter and honey mixture to the oats and stir. Continue to add the peanut butter and honey to the oats while stirring to ensure all oats are coated.

5. Some of the oats will begin to ball up into clusters. This is a good sign. If you enjoy granola clusters feel free to get your hands into that bowl and roll the majority of oats and PB into small clusters!

6. Place oats in a thin layer on a baking pan and place in the oven for 20 minutes at 275 degrees Farenheit. After 20 minutes take a peek at the oats and give them a stir on the baking pan. Place the oats back in the oven for 10 minutes or until crip and golden. Allow to cool before transferring to mason jars or storage containers.

7. Store in a sealed container for up to 2 weeks.

8. Enjoy your homemade oats!

Quick tips: Sometimes I like to add extra ingredients like cinnamon, almonds, peanuts, raisins, dates, etc. Get crafty with your granola!
