Roasted Cauliflower Tacos

Hello friends & happy Taco Tuesday! In honor of Taco Tuesday I am sharing a vegan and/or vegetarian taco recipe (make it what you want). These Cauliflower tacos are delicious, nutritious, and require minimal prep & bake time. I hope you give them a try and enjoy them as much as I do.

My inspiration for these cauliflower tacos came from two sources.

The first: A few weeks back I spent a wonderful weekend away in Nashville, TN. During my weekend getaway I was lucky enough to enjoy a Sunday lunch with my lady friends at Bartaco. One of the tacos I ordered for lunch was a cauliflower taco and it was delicious. After tasting my first cauliflower taco, I decided to create my own and the result was quite tasty.

The second inspiration: A recipe for gorilla meat tacos thanks to my old boss, Dr. Amanda :). Gorilla meat tacos are made from ground walnuts and spices such as cumin, coriander, chili powder, etc. I will share this recipe on the blog in the near futute :)

Roasted Cauliflower Tacos

Great for: breakfast, lunch, dinner

Serves: 2, makes about 6 tacos

Prep time: 20 minutes

Bake time: 25-30 minutes

Ingredients for Roasted Cauliflower Tacos

1 head cauliflower, chop florets into bite-size pieces

1/4 cup olive oil

2 tbsp fresh lime juice (approx juice of 1/2 lime)

1/2 garlic clove, minced

2 tsp cumin

2 tsp chili powder

1 tsp coriander

1/2 tsp sea salt

pinch of black pepper (to taste)

1/8 tsp cayenne (optional - if you like a bit of spice)

6 tortillas of your liking (I prefer corn tortillas, other options: flour tortillas, lettuce wraps)

Taco toppings I recommend:

1 cup of purple cabbage, thinly sliced

1 ripe avocado sliced or mashed (I like mine mashed)

2 tbsp garlic hummus

1 handful cherry tomatoes, quartered

1/4 red onion, finely chopped

Fresh cilantro

Fresh lime jucie

Also, guacamole, hummus & salsa make tasty additions . And if you're not keeping things vegan pile on some sour cream, cheese, whatever your heart desires.

Instructions

Preheat oven to 400 degrees Farenheit. Line a baking sheet with aluminum foil or parchment paper.

In a large bowl mix together olive oil, lime juice, garlic, cumin, chili powder, coriander, sea salt, pepper, and cayenne until well combined. Stir in cauliflower florets and mix well until all florets are well coated with the oil and spice mixture.

Place coated cauliflower on baking sheet and roast in oven for 25-30 minutes. While cauliflower is roasting in the oven prepare your preferred taco toppings.

After 15 minutes check on florets and give a quick stir/toss on the baking sheet. Cauliflower will be done when soft and golden brown (approx after 25-30minutes). Remove from oven and let cool.

If you like you tortillas warm, lightly toast tortillas in the oven or in a frying pan while preparing your taco toppings.

Now its time to craft the tasty tacos! Feel free to do your thing here. I like to start with a slightly toasted corn tortilla. Spread mashed avocado and garlic hummus on the toasted tortilla, top with cauliflower, cabbage, red onion, tomato, cilantro, squeeze of lime juice, and if I have it on hand, I top it off with some salsa verde (homemade salsa verde and hummus recipes coming to the blog in the future!).

Note to self, and others: I tend to get excited and overfill my tortillas, which makes it hard to eat. Keep in mind, less is more :)
