Four Ingredient Vegan Ice Cream

Happy first day of fall y'all!
Ah, fall, I love fall. Cooler temperatures, colorful trees, crunchy leaves, sweaters, boots, bon fires, s'mores! Mmmm, I just love everything about it.
However...I am currently living in Miami Beach where it doesn't feel like fall at all. Today in Miami it's a beautiful, sunny 89 degree day. Later I will embark on a paddle boarding excursion with my significant otter in Biscayne Bay and I am not complaining.
Don't get me wrong, I will miss the fall colors and the crisp mornings. I have already booked a flight to Chicago for a weekend in October. All is good, I will get my fall fix in. As for life in Miami I am feeling quite comfortable living here :)
So, back to today's special recipe. Today's recipe is not a warm and comforting fall dish that you may expect a recipe blogger to post on the first day of fall. Instead, it's a cold, refreshing, and tasty vegan ice cream! Also known as Banana Nice Cream. It's creamy, satisfying, healthy, and so versatile. And, it only requires four ingredients!

Now that I have talked up this nice cream creation..your mouth might be watering and you might be wondering how to make this healthy alternative ice cream treat. If so, check out the super simple recipe below:
Four Ingredient Chocolate Peanut Butter Banana Nice Cream
Serves: Two - Four, depending on how much you love it
Perfect for: Snack, breakfast, dessert
Prep time: 1-2 hours, to freeze bananas
Make time: 10 minutes or less!
Ingredients
Four ripe bananas (brown speckled), slice into small bite size peices and place in freezer for 1-2 hours or until frozen.
1/4 cup almond milk (any variety of dairy free milk will work -- chocolate almond milk, coconut milk, etc.)
1/2 cup peanut butter (I use creamy natural PB, any PB will work)
1/4 cup cocoa powder
Tools : Powerful blender or food processor
Toppings : In the photo above I used chopped hazelnut dark chocolate.
Note : not all dark chocolate chunks/chip are vegan, so if you're really focusing on keeping things vegan check your chocolate labels! Other delicious toppings include: dried coconut flakes, PB and/or chocolate drizzle, nuts, fruit, marshmallows, cookies etc.
Directions
1. Slice ripe bananas into bite size pieces and place in freezer for 1-2 hours, or until completely frozen.
2. Once bananas are completely frozen place separated frozen banana chunks in a powerful blender or a food processor. I use a food processor, I think it dose a great job of cutting through the frozen fruit and creating a creamy banana nice cream.
3. Add almond milk to the food processor. Blend together amond milk and frozen bananas, scrape down the sides as needed. Note: the more milk you add the more soupy your nice cream will be. Less is more. It will take a few minutes of blending to cut through the frozen bananas and create a creamy ice cream texture, patience is key here!
4. Once the banana mixture starts to smooth out you may add the peanut butter and cocoa powder. Continue to blend until all ingredients are combined and no frozen banana chunks remain.
5. Spoon delicious banana nice cream creation into dishes and top with chocolate chunks, or any topping(s) of your choice!
6. Enjoy and savor the flavor!
P.S. If for some reason you do not consume all banana nice cream in one sitting (impossible for me, I never manage to have left overs) you may place left over nice cream in the freezer in a sealed container.
