Gorilla Meat Tacos

Hello and happy Friday friends! Today is a special day. I am going to share the one and only gorilla meat recipe!
I came upon this recipe a few years ago when my former boss Dr. Amanda was eating gorilla meat for lunch. She gave me a taste and informed me that walnuts were the secret ingredient to the taco tasting 'meat' she was eating, I was blown away. She shared the gorilla meat recipe link with me and since then I've been making gorilla meat on a regular basis. Typically I eat the gorilla meat in taco form with corn tortillas and various tasty toppings. However, I also enjoy making nachos and taco salads with gorilla meat.
Gorilla meat is easy to make, delicious and loaded with health benefits. Even my dad (a meat loving man) enjoyed my gorilla meat tacos! I hope you give it a try!

Gorilla Meat Tacos
Vegan, vegetarian, gluten free
Serves: 2-4 (makes approximately 6-8 tacos)
Perfect for: breakfast, lunch, dinner
Prep time: 3 hours (walnuts need to soak in water to soften)
Make time: 10-15 minutes
Ingredients:
2 cups walnuts
1 Tbs. cumin
½ Tbs. coriander
2 Tbs. tamari (gluten free soy sauce, can be found in your typical grocery store)
1 tsp. chili powder
a dash of cayene if you like your taco meat spicy (optional)
Corn or flour tortillas
Taco toppings : I prefer avocados, tomatoes, onion, red cabbage to add a bit of crunch, cilantro and salsa verde.
Tools : food processor or powerful blender
Directions:
1. Soak walnuts in a bowl of cold water and place in the fridge for at least 3 hours or let soak overnight.
2. Drain walnuts and place in the bowl of a food processor, blend until walnuts become similar to the consistency of rice (pictured below). It doesn't take long for the walnuts to blend into a rice like consistency. The key is to not let the walnuts become mush! So, better to blend a little and take a peek at the consistency then blend a bit more if needed.

3. Once the walnuts are at the right consistency spoon the mixture into a bowl and mix in the spices and tamari. I prefer to add the spices first little by little and then the tamari. Mix well!
4. Now its time to heat up those tortillas and create your unique, nutritious and delicious gorilla meat tacos!
