Vegan Apple Banana Bread

Aloha, friends! Again, it has been a long time since my last post. I am going with the flow over here. I go through phases of wanting to document and share my recipes and phases of not wanting to document my creations and only consume them :)

Today I am excited to share this Vegan Apple Banana Bread recipe with you. My friend Stephanie told me she made this recipe and it turned out a bit dry. So, she sent me the recipe and I got to work trying to find what I could modify in order to create and moist loaf of irresistible bread.

The modifications I made included:

1. Using coconut oil instead of apple sauce (mostly because I rarely keep apple sauce on hand).

2. I used white flour (and a smaller amount of flour) instead of wheat flour. I am a fan of wheat flour but I had a hunch this could be part of the reason the banana bread came out dry.

3. I added 1 tablespoon of almond milk because I felt the batter looked a bit thick after mixing everything together.

And the end result; a moist and light vegan banana bread. Woot woot! If this intrigues you in anyway check out the recipe below.

Vegan Apple Banana Bread

Prep time: 10-15 minutes

Bake time: 25-30 minutes

Total time: 35-45 minutes

Serves: 8 decent sized portions

Ingredients:

2 very ripe bananas

1 apple diced (feel free to peel it, I leave my skin on)

1/4 cup sugar (I use raw sugar or coconut palm sugar, any sugar will do)

1 cup white flour

1/4 cup melted coconut oil (plus a bit extra to grease your baking pan)

1 tablespoons of almond milk (any nut milk will do, what the hay, cows milk will do but it won't be vegan)

1 teaspoon baking soda

1 teaspoon cinnamon

2-3 tablespoons chopped walnuts (optional - 2 tablespoons in the mixture, 1 tablespoon to sprinkle on top).

Directions:

1. Preheat oven to 350 degres farenheit. Grease a 9 inch loaf pan or a large cast iron skillet with coconut oil.

2. Mash bananas with a fork in a medium-sized bowl

3. Add diced apples, sugar, flour, coconut oil, almond milk, baking soda, salt, walnuts, and cinnamon to the mixing bowl and mix well.

4. Pour mixture into greased pan, option here to sprinkle chopped walnuts on top.

5. Bake for 25-30 minutes or until a toothpick inserted in the middle comes out dry.

6. Let cool for 15 minutes, then enjoy your kitchen creation!
